Soft Chicken Taco Meat

This is our family’s favorite recipe for soft chicken taco meat.  And the best thing is that it freezes beautifully!  Can’t we all use another (or another dozen!) recipes that freeze well?  Enjoy!



SOFT CHICKEN TACO MEAT

3 boneless, skinless chicken breast halves
1 – 2 T. oil
1/2 large onion, chopped
2 cloves garlic, minced
1 – 16 oz. can stewed tomatoes
1 jalepeno pepper, minced
1 bay leaf
1 T. chili powder
1 t. ground cumin
1/2 t. oregano
flour tortillas
shredded cheese
sour cream

Bring large pot of water to a boil.  Rinse chicken and add to boiling water; poach until done.  Remove, cool slightly, and shred/cube.

In large skillet, heat oil over medium heat.  Add onions and garlic and heat about 5 mnins., or until tender.  Drain off fat.  Stir in undrained tomatoes, chopped jalepeno, bay leaf, chili powder, cumin, oregano, and 1/4 t. black pepper.  Add chicken.  Simmer for 30 mins.

Serve with warm tortillas, cheese, and sour cream.
Serves 4-6.
